Chamomile Olive Oil Cake

The weather is warm, the sun is out, and it’s finally feeling like summer!!  My family and I have been in Northwest Arkansas for little while and we are loving how beautiful and green the countryside is out here!  The weather has warmed up quite a bit and we have been enjoying lots of time in the backyard.  I wanted to make a nice, light dessert to enjoy outside while we picnic (and something easy to eat while chasing a toddler).  I’ve been experimenting with my olive oil cake recipe for a little bit, and thought maybe adding some calming chamomile tea would make a yummy sweet treat for our relaxing summer picnic!  My Chamomile Olive Oil Cake will add the perfect amount of sweetness to any summer day! 🙂

Preheat your oven to 350*F.  In a medium-size bowl, sift together the all-purpose flour, baking powder, chamomile tea, and salt.  Set your dry ingredients aside for now.  In a larger bowl, whisk together the granulated sugar and eggs.

Once the sugar and eggs are thoroughly whisked together, whisk in your olive oil.  The olive oil might seem like it’s separating a little bit, but it will come together once you add all of the ingredients, so don’t worry!

Next, add in the vanilla Greek yogurt and milk until everything is nice and smooth.

Carefully fold your dry ingredients into the wet ingredients.  Be careful not to just stir everything together.  Gently folding the ingredients will give your cake a lighter texture as an end result.  The batter is ready, yay!

Pour your olive oil cake batter into a greased 9″ x 5″ loaf pan.  Bake your cake for about 40 to 45 minutes.  I like to check on it after the 35 minute mark just to make sure it’s baking well and not browning too quickly on top.  You’ll know your olive oil cake is done when a toothpick inserted into the center comes out clean.

Allow your cake to cool completely on a counter top.  Sometimes I’ll make the cake before bed and let it cool overnight.  It’s hard not to resist taking a taste, but it’s so nice looking forward to fresh chamomile olive oil cake the next morning!  Once your cake is cool, cut it into slices (your choice of thickness) and serve with homemade whipped cream!  Take your cake outside, sit on a picnic blanket, and enjoy your cake in the beautiful summer sunshine! 🙂

Chamomile Olive Oil Cake

Yields: 1 – 9″ x 5″ Loaf Cake

Prep Time: 15 Minutes

Bake Time: 40 to 45 Minutes

 

Ingredients

2 Cups All-Purpose Flour

2 teaspoons Baking Powder

3 teaspoons Chamomile Tea

1/2 teaspoon Salt

2 Eggs

1 Cup Granulated Sugar

2/3 Cup Olive Oil
