
If you’ve ever seen a desert sunrise, you know it’s quite a spectacular sight. The gorgeous array of colors that come together to wish you “good morning!” are always breathtaking. I emulated my memories of watching the sun rise in the desert with my Desert Sunrise Chia Pudding Parfait. The layers of polka dotted chia pudding, golden pineapple, bright orange tangerine, and red strawberry will make you feel like you’re in the desert enjoying the beautiful morning dawn!

The first step to make this parfait is to make your chia pudding. See my recipe here for quick and easy Chia Pudding. Once your chia pudding is ready, cut up your pineapple and tangerines. In a food processor or blender, blend your pineapple chunks until smooth. Set aside in a container for now. Next, blend your tangerine pieces until smooth.

In your serving dish (or a jar with a lid), place a layer of chia pudding. Then divide your pineapple puree into both dishes. Place another layer of chia pudding on top of the pineapple, then spoon in your tangerine puree into both dishes. Place your final layer of chia pudding into both jars and then spoon your strawberry preserves on top. Adorn your parfaits with a dusting of shredded coconut and a few tangerine slices. Time to greet the day and enjoy the sunrise with these gorgeous chia pudding parfaits! An easy-to-make and healthy breakfast that would be a beautiful addition to any brunch table as well!

1/4 Cup Chia Seeds
1 Cup Coconut Milk
1/2 Cup Cutie Tangerines (About 2 1/2 Cutie Tangerines Chopped, save the additional for topping)
3/4 Cup Chopped Pineapple
1/4 Cup Strawberry Preserves (I use All-Natural, No Sugar Added)
Shredded Coconut for Topping
