
It’s been raining here in Southern California for almost two weeks straight, and as happy as I was to cozy up inside with my softest sweaters and a hot cup of coffee, I was definitely feeling the lack of sunshine. Finally this morning, the sun peeked out from behind the storm clouds and gave all of us a much needed day of joyous rays and some vitamin D! With the gorgeous day ahead of me, I thought it would be perfect to whip up some breakfast parfaits with a whole array of winter citrus fruits to give my family and I a vitamin C boost while we soak up this sunny day! 🙂 My Tropical Winter Citrus Parfait is a bright combination of grapefruit, orange, tangerine, lime, and fresh mango with creamy coconut yogurt and crunchy coconut-chia granola for a breakfast that will pick you up out of the winter blues!

This parfait is very easy to assemble and perfect to meal prep and have on hand in your fridge for an easy breakfast or snack on those busy days. First, start by slicing the grapefruit, orange, and lime into very thin slices (half-circle shaped). Next, peel the tangerine and separate the segments into individual pieces. Lastly, slice your fresh mango into thin slices. Time to assemble the beautiful parfaits! Into your serving dish (or a jar with a lid if you would like to meal prep), add your creamy coconut yogurt (I like the Noosa Coconut yogurt). Arrange the grapefruit, orange, lime, and mango slices on top. Next, add your tangerine segments and coconut-chia granola. (I will be posting my Homemade Coconut-Chia Granola recipe soon, but for the days I don’t have time to make it from scratch I really love Aldi’s Coconut-Chia Granola. It’s delicious and inexpensive for a large box of it!) I like to garnish the parfait with a sprinkling of chia seeds for a pop of contrasting color, then it’s time to enjoy this vitamin-filled bowl of sunshine! 8 Oz. Coconut Yogurt
1/4 Cup Coconut Chia Granola
1/4 Grapefruit, Thinly Sliced
1/4 Orange, Thinly Sliced
