What I’m Loving

It’s halfway through summer and we’re in the middle of a heatwave in Oklahoma right now. The kiddos and I have been spending our mornings and late afternoons outside playing in the garden, taking trips to the creek, and swimming in our little pool. The hottest part of the afternoons we’re getting creative and trying to find lots of crafts and activities to keep us busy (and not too stir crazy) indoors. It’s been a busy week and we are getting ready for our trip to California in a few weeks to visit family, but here are a few of the things I’m loving right now:

Summer Reading

When I was younger, I absolutely loved summer days where I could sit outside all day long and get lost in a good book. Some days I wouldn’t even realize how long I was absorbed in my reading until the sun would start to set and I had to wander back inside. Those slow, simple summer days are such warm memories for me. My husband absolutely loves Caprese salad, so I wanted to try to bring that rich Caprese taste and also make it full of fresh produce and big enough for a meal. My Summer Caprese Chopped Salad with Blackberries is full of fresh basil, tomatoes, mozzarella, cucumbers, spinach, and juicy blackberries all enrobed in a citrus-balsamic dressing. Trust me, this salad recipe will be the perfect summer staple that everyone will enjoy!

Pineapple Coconut Overnight Oats

The weather is warming up and quite frankly, these hot mornings make me want it to be summer already! Waking up early and the sun already shining bright makes me crave to just pack the kiddos in the car and head to the beach. Unfortunately, we are currently not living even close to any ocean, so I’m just going to have to pretend I’m at the beach instead. My Pineapple Coconut Overnight Oats are a delicious combination of rich and creamy coconut milk oats, shredded coconut, vibrant pineapple, and topped with crisp toasted coconut that will make any morning feel like you’re waking up on a tropical beach!
