Tropical Winter Citrus Parfait

It’s been raining here in Southern California for almost two weeks straight, and as happy as I was to cozy up inside with my softest sweaters and a hot cup of coffee, I was definitely feeling the lack of sunshine. Finally this morning, the sun peeked out from behind the storm clouds and gave all of us a much needed day of joyous rays and some vitamin D! With the gorgeous day ahead of me, I thought it would be perfect to whip up some breakfast parfaits with a whole array of winter citrus fruits to give my family and I a vitamin C boost while we soak up this sunny day! 🙂 My Tropical Winter Citrus Parfait is a bright combination of grapefruit, orange, tangerine, lime, and fresh mango with creamy coconut yogurt and crunchy coconut-chia granola for a breakfast that will pick you up out of the winter blues!

Autumn Glow Bowl

The autumn winds have been blustery this week, and I’m adoring being able to bundle up in all my fluffy robes, sweaters, and scarves! When the weather is chilly outside, I love to kick on my oven and cook something that will fill the whole house with the delicious scents of autumn’s seasonal goodies. I’ve been craving a nice big, healthy bowl filled with fresh veggies and vitamins to fill me up while keeping my energy up on these cold fall days. My Autumn Glow Bowl is a beautiful combination of gorgeous ruby red beets, roasted brussels sprouts, golden butternut squash, feta cheese, spicy arugula, heart-healthy walnuts, and nutrient-filled quinoa all tossed in a maple-balsamic vinaigrette. This is a soul-satisfying meal that will keep you feeling that autumn glow all season!

As a mom, my days start early and end late. Mid-afternoon always calls for a pick-me-up and lately I’ve been craving a cold, refreshing iced tea. Our garden has been blooming with herbs recently, and the basil and mint plants are looking beautiful! I decided to try combining some of that vibrant mint into my afternoon tea and it really was a refreshing combination. There are so many fall treats that I look forward to once summer comes to an end and that familiar chill creeps into the air. One of my favorite treats to indulge in is pumpkin doughnuts, but not just any doughnuts… Pumpkin Krispy Kreme doughnuts! And what’s better than pumpkin Krispy Kreme doughnuts?! Those melt-in-your-mouth pastries with some pumpkin spice coffee drinks! I headed to my local Krispy Kreme shop where the Warm Doughnut light was on and tried every new fall coffee drink and doughnut item they had to share my thoughts on these yummy fall treats! 🙂

Cowboy Caviar Potato Salad

The first time I tried cowboy caviar, was at the Trader Joe’s sample counter. They paired their version with a pork roast and, wow! It was so delicious, I threw three jars in my basket! This summer, cowboy caviar seemed to be a trending recipe in a lot of households and I was happy to see a lot of new lovers of such a delicious dip. I decided to put a twist on my traditional recipe and made Cowboy Caviar Potato Salad. A delicious blend of rainbow potatoes, black beans, corn, orange peppers, tomatoes, red onions, garlic, lime, and cilantro. It truly is a delicious, beautiful, and healthy dish to add to your summer table!
