*Showstopper* Summer Salad with Poppy Seed Dressing

One of the best things about summer is the gorgeous array of fresh fruit that is perfectly ripe and ready to be enjoyed! I love finding different ways to use all the delicious fruit while it’s in season. Lately I’ve had a craving for Panera’s strawberry salad with poppy seed dressing. I haven’t had it in yearssss, so it was a random yet particular craving. At the farmer’s market, I had just picked up some lovely nectarines and strawberries so I thought I’d try to feed my craving and make a salad using all the summer fruit I love! My Showstopper Summer Salad is a striking blend of spinach, strawberries, blueberries, nectarines, mandarin oranges, red onions, and honey roasted pistachios drizzled with a rich and creamy poppy seed dressing. Kid’s Mini Library: Summer Edition

Our little library all ready for summer!

My little wildflowers absolutely love to read and I’m so thankful because I’m a total book nerd! I’ve read to them since they were babies and always have books on hand for them to pick up and ponder with anytime they please. We all love going to our local library and perusing through the shelves filled with amusing stories waiting to be enjoyed. I thought it’d be fun to make a “mini library” at home with a few simple shelves that we could stock with books that we can change with the seasons and holidays. What I’m Loving

Gorgeous morning at the creek!

Summer is in full swing and the heat wave is continuing on here in Oklahoma! We’ve been working on a lot of projects inside the house (out of the heat) and building lots of forts and obstacle courses for the little ones to burn some energy. We took another creek trip and a day trip to Bentonville, Arkansas (about an hour away) to go to the Scott Family Amazeum. The Amazeum is a huge interactive kid’s museum and the little ones can go wild and play with anything and everything (they absolutely love it there)! We are heading out on our road trip to California next week and continuing to get packed and ready, which brings me to what I’m loving this week. I found some adorable kid’s summer outfits which are perfect for our California trip I want to share with you, along with the other things I’m loving this week! 🙂

Summer Reading

When I was younger, I absolutely loved summer days where I could sit outside all day long and get lost in a good book. Some days I wouldn’t even realize how long I was absorbed in my reading until the sun would start to set and I had to wander back inside. Those slow, simple summer days are such warm memories for me. I still absolutely LOVE to read and trust me, if I had the time to sit outside all day long and read I absolutely would! With the little kiddos it’s impossible to do that in this season of life, but I still make time to sneak away and sit on my porch swing and at least read a few pages in the warm summer sunshine.

Summer Chopped Caprese Salad with Blackberries

Summertime is here and with these beautiful, hot days I’ve been craving some big, fresh salads to enjoy while soaking up the sunshine! My husband absolutely loves Caprese salad, so I wanted to try to bring that rich Caprese taste and also make it full of fresh produce and big enough for a meal. My Summer Caprese Chopped Salad with Blackberries is full of fresh basil, tomatoes, mozzarella, cucumbers, spinach, and juicy blackberries all enrobed in a citrus-balsamic dressing. Trust me, this salad recipe will be the perfect summer staple that everyone will enjoy!
