Even though it’s September, the summer heat is still ragin’! My family and I are currently living in an adorable log cabin on a farm while my husband is in school. Unfortunately, there is no A/C in the cabin. We’ve managed to stay pretty cool thus far, but the last thing I want to do when it’s this hot is turn on the oven. But with no oven, how’s a girl supposed to bake her family a little something sweet for dessert?! I dove into my recipe collection and looked for anything that didn’t require an oven to prepare. Bingo! I picked up a handwritten recipe from my Grandma Lee. My Grandma Lee’s “Unbaked” Cookies will be the perfect treat on this hot summer day! No oven, no problem!
The first thing I do to get started is… grab a big glass of iced sun tea! Refreshing… Now back to the recipe. In a large bowl, place your oats, vanilla extract, and crunchy peanut butter. Next, in a small heavy-bottomed sauce pot, place your granulated sugar, cocoa powder, salt, and milk. Bring your cocoa mixture to a boil over medium heat. Boil only for 1 minute, do not overcook the mixture! It will almost look like brownie batter with its color and consistency.
Once the 1 minute of boiling is done, take it off of the heat and pour the cocoa mixture into your bowl with the oat mixture. Stir it all together with a rubber spatula, being careful because it is very hot!
Once you have mixed it together, it should be a thick, almost oatmeal cookie dough consistency. Using a spoon or cookie scoop, place rounds of the scrumptious chocolate oat cookies onto a parchment lined sheet pan.
Allow the cookies to cool to room temperature and voila! It’s that simple! Your “Unbaked” Cookies are ready to be enjoyed and there was no oven required. Grandma Lee definitely had a good idea when she wrote down this recipe, maybe it was her go-to summer treat recipe too! 😊
Grandma Lee’s “Unbaked” Cookies
Yields: 24 Cookies
Prep Time: 10 Minutes
Bake Time: Approx. 5 Minutes (Stovetop only, no oven)
Ingredients
2 Cups Granulated Sugar
3 Tablespoons Cocoa Powder
½ teaspoon Salt
½ Cup Milk
3 Cups Oatmeal (Course or Old-Fashioned)
1 teaspoon Pure Vanilla Extract
