Carrot Cake Overnight Oats

Oh My Word! Let me just say that who knew carrots could be so good for breakfast?! Seriously, these Carrot Cake Overnight Oats are my current obsession. The combination of shredded carrots, sweet raisins, spicy cinnamon, and creamy vanilla will make you feel like you’re having dessert for breakfast (but with none of the guilt)!

The first step to make these overnight oats is to shred your carrots. I like to shred mine quite small, sometimes if the carrots are too thick they don’t soften enough while soaking in the oats and milk. If I’m short on time though, I like to pick-up the pre-shredded carrots from the grocery store. Once the carrots are shredded, in a jar or container with a lid mix together your carrots, oats, milk, raisins, cinnamon, and vanilla.

Once thoroughly mixed to make sure there aren’t any lumps, place your lid on the container and let chill in the fridge for at least 8 hours, but overnight is preferred. I like to make a few of these at the same time to meal prep my breakfasts for the week. These overnight oats will stay fresh sealed in the refrigerator for up to 5 days, so they’re great for meal prepping for the week! The next morning, wake up, grab a spoon, and enjoy your dessert for breakfast! I love to top mine with a few extra raisins and some shredded coconut, but chopped nuts or a dollop of Greek yogurt are great toppings for these oats as well! These truly are so quick and easy to make, but they are so delicious and really keep you full for hours (even chasing the kiddos around). Carrot Cake Overnight Oats

Prep Time: 10 Minutes

Chill Time: 8 Hours (Or Overnight, Preferred)

Serves: 1

Ingredients

1/2 Cup Oats

1/4 Cup Shredded Carrots

2 TBSP Raisins

1 tsp Cinnamon

1/8 tsp Vanilla

3/4 Cup Unsweetened Almond Milk

Optional Toppings: Extra Raisins, Shredded Coconut, Chopped Nuts, Greek Yogurt
