Pineapple Coconut Overnight Oats

The weather is warming up and quite frankly, these hot mornings make me want it to be summer already! Waking up early and the sun already shining bright makes me crave to just pack the kiddos in the car and head to the beach. Unfortunately, we are currently not living even close to any ocean, so I’m just going to have to pretend I’m at the beach instead. My Pineapple Coconut Overnight Oats are a delicious combination of rich and creamy coconut milk oats, shredded coconut, vibrant pineapple, and topped with crisp toasted coconut that will make any morning feel like you’re waking up on a tropical beach!

The first step to making these Pineapple Coconut Overnight Oats is to make your fresh pineapple puree. In a blender or food processor, blend your chopped pineapple until smooth. Set aside for just a few minutes while you gather the rest of your ingredients. In a container or jar with a lid, mix together your oats, coconut milk, shredded coconut, and pineapple puree.

Place the lid on the container and set in the refrigerator overnight (or at least 8 hours). When ready to eat, top your oats with toasted coconut and some pineapple slices. These oats are a delicious, tropical way to enjoy a hot summer morning! As I’m sure many parents can relate, I’m usually chasing the kiddos around while I eat breakfast, but amongst the chaos (and the toy bin being dumped out for the third time in an hour) when I eat these oats I close my eyes for just a second and pretend I’m on a tropical beach somewhere… teehee!

Chilling Time: 8 Hours (Or Overnight)

Serves: 1

Ingredients

1/2 Cup Old-Fashioned Oats

2 TBSP Shredded Coconut

1 1/2 TBSP Pineapple Puree

3/4 Cup Coconut Milk

Instructions

The first step to making these Pineapple Coconut Overnight Oats is to make your fresh pineapple puree. In a blender or food processor, blend your chopped pineapple until smooth. Set aside for just a few minutes while you gather the rest of your ingredients. In a container or jar with a lid, mix together your oats, coconut milk, shredded coconut, and pineapple puree. Place the lid on the container and set in the refrigerator overnight (or at least 8 hours). When ready to eat, top your oats with toasted coconut and some pineapple slices.
